I will say that my expensive “whole animal” butchery in Saxapahaw has been holding prices stable for a long while.

Beef and lamb are grass-fed and the pigs sure tear up a small amount of forest and are moved on so that the land can recover. So, their food in-put costs haven’t increased. Labor has.
