People talk about the obesity epidemic but neglect to talk about how fucking horrific food was in the day.
Thing is, back in the day - let's say the 1950's and 1960's - back when a lot of those old recipes and "horrific food" came about - there was no obesity epidemic. Go back and look at the old photos, movies, TV shows, your own family's photo albums... you hardly ever saw a fat kid... and a fat adult was looked at like: "he must have a thyroid problem, bless his heart".

Actually, RFK jr is a total dick and an absolute weirdo, but maybe some of his diatribe against big food manufacturer's and what the USDA and powers-that-be in America allow in our processed foods has some merit. There are LOADS of total shite allowed in our foodstuffs that are outright BANNED in Europe and other parts of the developed world.

Somewhere along the line - probably mid-to-late 1970's - our processed foods went squirrelly. And it was also around that time Americans started getting lazier and lazier. Started watching cable TV all the time and eating Doritos with Kraft American "cheese-substance" in individually wrapped slices. I don't think it was your grandmother's cooking inspired by the 1963 edition of Better Homes and Gardens Cook Book - with the gingham cover.

I have no doubt that the increased level of processing going into most food products and chemical addatives that corporate entities introduced as a means to heighten profit contribute in no small way to the obesity epidemic.

I also think that the fact that we're no longer serving gelatin molds filled with shrimp probably has something to do with the fact that people are eating more.

Both can be true.
 
I am helping my father-in-law prepare Thanksgiving for Thanksgiving Day and (10-12 people) then coming back home to do it all again for my mom and her sister and us (so only five of us).

I’m doing a small turkey (my FIL already bought so no idea about quality but he said it is 8.5 lbs) and a small ham for Thanksgiving Day. I plan to do Cornish hens for the Saturday meal (as well as glazed ham).

Been busy so haven’t sorted out all the sides yet.
So what you’re saying is … you’re going to neglect the Zizzle for a few days.

I live in NoVA, traffic all over this area was so heavy. The heaviest road traffic for this holiday was expected to be between 12 noon and 9 PM. I can only imagine how bad interstate travel must have been . . !

my close friend is one of the largest chicken broiler farmers in nc and he won't eat any mass produced chicken, beef or pork.

There is no "wash or no wash." There is no reason to wash turkey or chicken or other poultry before cooking. Unless you, like, drop it on the floor, in which case you should really probably just throw it away.

Processed foods almost certainly play a role but I'm fairly confident that our sedentary lifestyles play the biggest role.

I know that lots of people in different parts of the world do it. There is no reason to do it. It accomplishes nothing from a "cleaning" perspective. And increases the risk that you will spread germs for no reason. If people are putting some on the poultry as a marinade for flavor, or to tenderize, then sure, have at it. But there is no need whatsoever to "clean" poultry that you buy from a grocery store.

Raw meat is supposed to smell "raw." I don't even know what that means. You should usually pat your poultry dry when you get it out, but not 'clean" it in any way.
