I got a pizza oven for Christmas.

You can now buy containers of bacon grease at the store, fwiw. It comes in handy sometimes. My wife likes to put a dollop in her green beans.Very easy, almost foolproof
I didnāt have any animal fat for searing (just used a neutral oil) but that would make them next level

Where and when I grew up ,bacon grease was a condiment. You used it for flavor in vegetables and it's still the best thing to fry eggs or baloney in.
