Okay so the wife and I had our 43rd anniversary and decided to do a road trip and check out Vivian Howard's new version of the chef and the farmer. It was wonderful we went mid-afternoon on Saturday so it was pretty slow. Anyway we ordered the root vegetables and fried collards for advertiser stuff along with the sandwiches. Long story short I decided to make the crispy collards for tomorrow and found the recipe about baking them at 275 and I got to tell you these collard chips are smoking good! Only used kosher salt red pepper flakes and olive oil after spinning the torn leaves de-ribbed and baked at 275 for 20 minutes.
I'm going to make a bushel of them for New Year's day!IMG_20241224_201244081.jpg

I didn’t have any animal fat for searing (just used a neutral oil) but that would make them next level
You can now buy containers of bacon grease at the store, fwiw. It comes in handy sometimes. My wife likes to put a dollop in her green beans.

My wife likes to save the bacon grease, but we never really use it. Maybe I can put it to use with this.

Where and when I grew up ,bacon grease was a condiment. You used it for flavor in vegetables and it's still the best thing to fry eggs or baloney in. A little bit in onions when you saute them for burgers is good, too.

My mother, a transplanted yankee, learned this trick from her first next door neighbor, a southern girl from down east somewhere. I've done like you and use pretty much the same. Sort of panic when the bacon grease gets low and go out a buy some bacon to fry up.

ETA and as per @finesse You can't call yourself a good cook unless you throw in some grease with green beans. We all know god created those to go with each other.
