“Egg salad” is a Yankee variation. People put other shit, like chopped pickles, onions or relish in “egg salad.”

My mama mashed up the boiled eggs, used a combination of Duke’s mayo and French’s yellow mustard (not a lot, just enough so it sticks together,) a smidge of apple cider vinegar, and salt & pepper. It was smeared between two slices of white bread and called a deviled egg sandwich. That’s how they did it in the Bible.

That sounds good, except that I still believe pickle relish and just a pinch of sugar helps.

I mean, you still need Mt. Olive sweet relish and some paprika on top. But you ain't far from the truth.

Now as far as deviled eggs go that's a damn fine deviled egg as well. But there are alternatives that are every bit as good. One of my responsibilities at Thanksgiving is deviled eggs and I happen to know quite a few recipes that are less conventional but very well received.
