Canned food giant Del Monte has filed for bankruptcy after being in business for nearly 140 years. The company cited changing consumer preferences, bad business moves made during and right after the covid pandemic, and other issues as reasons for their bankruptcy. They're looking for a buyer.
Just thought I would mention it as Del Monte canned foods were a staple of Southern country cooking when I was growing up, I know my great-grandmother and grandmother and other relatives used their products frequently. Times are indeed a-changing if they've declared bankruptcy.
Really sorry to hear that. I'd never been before, but we actually hosted our rehearsal dinner there just a couple of months ago. We had a great time and had several guests tell us after the fact that it was the best rehearsal dinner they'd ever had/been to; lots of positive remarks about the food specifically. Those look great, but Jiffy would be way too sweet for me. Probably good for a first okra experience, though. I'd suggest using just cornmeal next time to see how everyone likes it, but get the finest-ground cornmeal you can find. The coarse grind can be too much. Corn meal packaged as polenta is usually fine in a pinch. Love the photo, though! Those wings look good, too.So, other than me no one in my family has eaten okra. (I know @superrific i should do better).
My mom planted an Okra plant, but she's been gone for a few weeks. So.... we decided to make fried okra. In looking up recipes. My wife read one note that you can substitute Jiffy corn muffin mix instead of cornmeal.
Very interesting. Didn't realize how much sugar is in the muffin mix. It actually caramelized on top of the frying oil.
In the end they were sweeter than any is had before but they were ok. Now my family has eaten Okra.

Didn't plant any this year, but I love slicing my okra, tossing in some kind of oil, seasonings, and cornstarch and throwing them in the air fryer. A little less heavy and bready than the traditional fried okra, but I love itSo, other than me no one in my family has eaten okra. (I know @superrific i should do better).

This is one of my favorite dishes this time of year. Don't knock the website -- this thing is really good. And uses a ton of tomatoes, especially if you're about to lose some before you can eat themWe've been getting a lot of tomatoes from our garden recently - too much for me to use on tomato sandwiches alone. So over the weekend my daughter and I made tomato sauce from scratch, with fresh tomatoes, for the first time. We used some onions, garlic, red pepper flakes, olive oil. salt, pepper, sugar, and Italian seasoning. The result was pretty good; maybe a touch over-seasoned. I should have blended it at the end to make it a "smoother" sauce but we left it chunky and it was pretty good.
