Thanksgiving 2025

Forgotten Culture War Moments: "Each time I serve pumpkin pie, I get to share a little known slice of American history. Although meant to unify people, the 19th-century campaign to make Thanksgiving a permanent holiday was seen by prominent Southerners as a culture war. They considered it a Northern holiday intended to force New England values on the rest of the country. To them, pumpkin pie, a Yankee food, was a deviously sweet symbol of anti-slavery sentiment."

I have been eating Yankee food every Thanksgiving ? Eating pumpkin pie was( is ? ) a woke dessert to oppose slavery ?

From now on banana pudding will be our Thanksgiving dessert !

I know that lots of people in different parts of the world do it. There is no reason to do it. It accomplishes nothing from a "cleaning" perspective. And increases the risk that you will spread germs for no reason. If people are putting some on the poultry as a marinade for flavor, or to tenderize, then sure, have at it. But there is no need whatsoever to "clean" poultry that you buy from a grocery store.

Raw meat is supposed to smell "raw." I don't even know what that means. You should usually pat your poultry dry when you get it out, but not 'clean" it in any way.

No one thinks they are killing or removing bacteria

Modern grocery store chicken is pretty good. And if you’re not brining you’re a damn loser and have no place cooking chicken to begin with

In any case, not hard to rinse something and not contaminate the entire kitchen

Processed foods almost certainly play a role but I'm fairly confident that our sedentary lifestyles play the biggest role.
I’ll give it 50/50. Fast food and overly processed food with some added B.S. to the processing (the stuff that is banned in other, more intelligent countries) PLUS the sedentary life = our weight and health issues.

Cross contamination is definitely a risk and birds can be some bad boys in this.
And rinsing him off does hold a small risk if you're sloppy and not paying attention... but even greater risk is not enough hand-washing after handling Foghorn Leghorn.
Then there's the food-borne illness factor of under-cooking him, etc.

A dry brine can hold in some moisture and add tons of flavor and produce a crispy skin - so it's true, rinsing is not mandatory - and neither is a wet brine for juiciness and flavor aspects.

But whatever you do boys and girls - wash the hands often. And a little sanitizer spray and a good wipe down on the surfaces in the kitchen is always a good thing after the bird's in the oven.

Pumpkin pies, strawberry pies and cranberry relish made. Thanksgiving broth simmering. Turkey patted dry and well salted/seasoned. Cooking in my in-laws small and cluttered kitchen is sort of stressful but I think I’ve sorted out a process. May be tougher tomorrow with all the sides to prep. They have collectibles and junk on every surface.

Butternut squash fans? Fuck a sweet potato casserole. We’re not doing the cloyingly sweet thing with marshmallow fluff here. Good old fashioned savory mashed butternut squash. A full stick of butter and a healthy dose of salt and pepper. Heaven on a plate.

Listening to NPR yesterday and they said that we prefer canned cranberries!
We spatchcock when we do turkey but I have to agree with America canned cranberry is better for leftovers than the whole berry stuff!

I love butternut squash. But I also don’t ruin sweet potatoes with marshmallow fluff. Fresh baked sweet potatoes with butter are delicious — I usually bake them and use them to make sweet potatoes soufflé…

Ok, I’m intrigued by the sweet potato soufflé. I’d like to give that a try.

But of course there are few soufflés I wouldn’t want to try.
