Secret is using eggnog instead of cream and separating the eggs/beating the egg whites to stiff peaks before combining. But don’t have my recipe with me on this trip (my MIL just wants canned yams with cinnamon added).Ok, I’m intrigued by the sweet potato soufflé. I’d like to give that a try.
But of course there are few soufflés I wouldn’t want to try.
