I don’t think you’re understanding at all what that comment by Walz means.I don’t think even Walz himself would try to claim he’s a moderate. He claims he’s a progressive and that progressives shouldn’t compromise their progressive values. He was quoted as saying one man’s socialism is another man’s neighborliness.
The strategy with Walz is “this guy believes in our progressive agenda but he’s relatable to people in the Midwest”. I don’t think the strategy with Walz has anything to do with him being moderate politically.
